1 large chicken
1& 1/2 sticks margarine
2 med. onions grated
1 tsp.minced garlic or 4 cloves garlic,pressed or powdered
2/3 c. flour, plain
4 tsp. curry powder
2 tsp. ginger powder
3 tsp. salt
4 c. milk
2 c. chicken broth, reserved from chicken
3 c. Rice
Condiments guests pick & choose. I use all!
boiled eggs, 4 - 6, half & slice
1/2 - 1 jar dry roasted peanuts
box of raisins
bananas, 3, half longways & slice
mandarin oranges, 3 small cans drained
flaked coconut, 1 can or small bag
Mango chutney, 1 jar, buy 2 just in case

Night before, cook 1 large whole chicken. Pour broth into a bowl. Refrigerate broth. Remove chicken from bone. Cut chicken in bite size chunks. Refrigerate chicken to add last.
Combine dry ingredients in small bowl: flour, curry pdr., ginger pdr. & salt. Set aside.
Remove fat from top of jelled broth. In med. pot warm broth and milk. In separate large pot, saute margarine grated onion and garlic on med. high until onions are tender. Whisk in dry mixture quickly until a paste forms. Lower heat to med. Add 2 c. of the hot milk/broth whisking quickly to blend paste completely & thicken 2-3 min. Add 2 more c. of liquid, blend & thicken 2-3 min.until bubbly, & continue until all liquid is added/blended into gravy-like mixture. Cook a little more to thicken. Stir in chicken until Curry mixture is hot. Serve with rice & condiments each person spoons over the chicken curry.

It's a Walker-Rushton family recipe given to me 33 years ago by my Mother-in-Law, Dot Walker at a Recipe Shower just before Scott & I married. Most of you know how my mother, Blanche Rushton liked to cook and try recipes, so of course she learned to make Chicken Curry and cooked it many times for all of us. This summer I had the privilege to prepare it alongside Mama Dot for her, Drew, Luke, Jodi, Drew's girlfriend and her sister (8 of us and we had leftovers for 2-4 to send home with Drew.)
