Banana Pecan Bread Recipe

1 3/4 cups flour
1 3/4 cups sugar
1/2 tsp. salt
1 tsp. baking soda
2 eggs
1/2 cup oil
1 1/2 tsp. vanilla
1/4 cup + 2 Tbsp. milk
4 medium bananas
1 cup pecans, chopped fine

In large mixer bowl combine flour, sugar, salt and baking soda, mix well.

Add eggs, oil, vanilla and milk. Mix until smooth; add bananas and pecans. Mix on medium speed until well blended.

Spray or butter 5 mini loaf pans, add 1 cup mix to each pan. Or add 2 1/2 cups to 2 large loaf pans.

Bake at 350 for 40 minutes or until toothpick comes out clean.
