2 c uncooked instant rice
½ c sliced green onion
½ tsp Cajun seasonin
1/3 c chopped green pepper
1 pkg (12 oz) frozen peeled
¼ c fresh snipped parsley
Deveined medium shrimp
½ tsp salt
3 Tbsp butter or margarine
1 pkg sliced cooked ham, chopped
2 tsp Cajun seasoning
1 jar pimiento, drained and diced
½ c sour cream
1 c halved or qtrd cherry tomatoes
½ c mayonnaise or salad dressin
6 slices bacon, crispy fried & crumbled
½ c chopped celery

Cook rice according to package with ½ tsp Cajun seasoning added to water; set aside. Thaw shrimp according to package. Sauté in butter and Cajun seasonings 3 to 5 minutes or until done throughout; drain. Stir sour cream, mayonnaise, celery, onion, green pepper, parsley and salt together in a large bowl until well blended. Gently stir in all ingredients except bacon until evenly coated with dressing. Cover and chill 4 to 6 hours. Stir in bacon. Serve on top of lettuce lined salad plates.
