1 dozen eggs
1 c diced ham
1 lg or 2 med potatoes, diced and cooked
˝ cup onion
1/3 cup green pepper
2 cups shredded cheese

Directions:
Directions:
Sauté onion and green pepper in 1 Tbsp butter; set aside. Spray 9 x 13 inch baking dish with Pam. Beat eggs, pour into pan (I add a bit of milk to my eggs – makes them fluffier). Add ham, potatoes, onions, green peppers and cheese; mix well. Bake at 325-350° for 25-35 minutes or until toothpick inserted comes out clean. You can substitute the ham for bacon or sausage or use all three!!! You can also add mushrooms, black olives or whatever else you might want to add.
