½ lb ground beef
¾ c chopped onion
¾ c shredded carrots
¾ c diced celery
1 tsp dried basil
1 tsp parsley
3 c chicken broth
4 c diced, peeled, potatoes
2 Tbsp margarine or butter

¼ c flour
8 oz velveeta cheese (cubed)
1 ½ c milk
¾ tsp salt ¼ tsp pepper
¼ c sour cream (optional)

Directions:
Directions:
Brown ground beef and drain; set aside. In same pan saute onion, carrots, celery, basil and parsley in butter until tender. Add broth, potatoes & beef; bring to a boil, reduce heat and simmer 10-12 minutes (until potatoes are tender). In small pan melt 2 Tbsp butter, add flour and cook until bubbly. Add to soup; bring to boil. Cook 2 minutes. Reduce heat to low. Add cheese, milk, salt and pepper. Cook until cheese melts. Remove from heat and blend in sour cream. Serve. I would increase the ground beef to 1 lb.
