Ingredients: 2 (1oz) squares unsweetened baking chocolate 1/4 c butter 1 c sugar 2 eggs 1/2 c flour 1/4 tsp salt 1/4 tsp peppermint extract Peppermint Icing: 2 tbsp butter 1 c powdered sugar 1/2 tsp peppermint extract 2 drops green food coloring 1 tsp water Chocolate Topping: 1 (6oz) pkg semisweet chocolate pieces 2 tbsp butter

Directions:Preheat oven to 350º. Grease an 8 inch square baking dish. Melt baking chocolate in the top of a double boiler over simmering water. Remove from simmering water and let cool to room temperature. Fit the steel knife blade into the food processor. Combine butter, sugar, eggs, flour, salt and 1/4 tsp peppermint extract in the work bowl. Process until smooth. Add cooled melted chocolate and process until mixed well and batter is dark brown with no streaks. Spread batter evenly in bottom of prepared baking dish. Bake 25 minutes. Cool completely before making Peppermint Icing. Spread icing evenly over cooled brownies and refrigerate 30 minutes. Prepare Chocolate Topping. Spread cooled topping over icing on chilled brownies to cover completely. Refrigerate brownies until chocolate has set. Remove from refrigerator 10 minutes before cutting into 2 inch squares. Peppermint Icing; Combine all ingredients in work bowl. Process until smooth. Chocolate Topping; Melt chocolate pieces and butter in top of a double boiler over simmering water. Stir to blend. Set aside to cool to room temperature. |
