1 can red or black beans
1 28-ounce can diced tomatoes
1 onion, chopped
1 green pepper, chopped
2 zucchinis, sliced
2 tablespoons oil
2 tablespoons chili powder
1 tablespoon cumin
1/4 cup fresh coriander
nacho chips
grated cheese

In hot oil, saute the vegetables. When soft, add remaining ingredients and cook for 15 minutes. Serve with nacho chips and grated cheese.
