Slices of bread
Eggs
Salt and Pepper to taste

Cut a hole in the middle of a slice of buttered bread with a round cookie cutter. Place the slice of bread in a buttered hot skillet. Crack egg and pour into the hole in the bread. Cook until egg is set. Turn over and cook the other side. Serve immediately.

This is a dish that Joe use to love to cook for the girls when they were little. I couldn't do a cookbook without adding this recipe in hopes that the tradition continues. The round circle of bread that you remove from the middle of the bread is to be placed on the skillet as well and toasted. Top with jelly and you have a great little breakfast.
