6 eggs
5 cups of sugar
1 1/2 pounds of butter or oleo
5 Lemons (6 if small)

Directions:
ºGrate rind off lemons. Squeeze juice out of lemons, discard pulp. You should get around 1 1/4 cups of juice.
Mix the sugar, butter, lemon juice and rind in a pan over the stove. Start heating.
Put the eggs in a bowl and beat with a whisk. Slowly add eggs to mixture, stirring constantly.
Bring to a boil and boil for 5 minutes.
Pour into jars. Makes about 4 pints.
Refrigerate after opening.

You can use this as a spread with cream cheese on bagels, use it as a jelly on toast. Also may be used as a dip with pretzel sticks. Very good!
