Pie Filling:
1 1/2 Cup Sugar
1/3 Cup Corn Starch
2 1/4 Cup Water
4 Egg Yokes, slightly beaten
1/2 Cup Lemon Juice = 1/2 to 2 large lemons
1 1/2 Tbs. Margarine

Meringue:
4 Egg Whites
1/2 Cup Sugar

Pie Shell:
1 1/2 cup of flour
2/3 cup of Crisco
pinch of salt

Beat at medium speed in mixer bowl until large granuals form. Add cold water drops at a time to form fluffy dough. Turn onto floured wax paper. Cover with another wax paper (flour dough first) and roll out. Place into 9 inch shell.



Filling:
Preheat oven to 350 Degrees F
In a medium saucepan combine 1 1/2 cup sugar and cornstarch. gradually stir in water until smooth. Stir in egg yolks. Stirring constantly, bring to boil over medium heat. Stir in lemon juice and margarine. Spoon hot filling into prebaked pie shell.



Meringue: In a mixer bowl beat egg whites at high speed until foamy. Gradually beat in 1/2 cup sugar. continue beating until stiff peaks form. Spread Meringue evenly over hot filling, sealing to edge of crust.



Bake: In preheated oven 20 to 25 minutes or until golden brown. Cool on rack and refrigerate.
