1 c. of Cooked Chicken - Diced
1/2 c. Fresh Mushrooms - Sliced and Sautéed
1/4 c. Chopped Pimiento
Chicken Stock/Broth
Butter
Cream
3 Tbsp. Flour
1 Beaten Egg Yolk
1/4 c. Blanched Slivered Almonds
1 Tbsp. Dry Sherry
Patty Shells or Bread Baskets to Serve In

Directions:
Directions:
Melt 3 Tbsp. of chicken broth or butter (or some of each). Stir in and blend 3 Tbsp. of flour.

Add slowly; 1 1/2 c. chicken stock or cream (or some of each).

When sauce is smooth and slowly boiling, add the chicken, mushrooms and pimiento.

Reduce heat and pour some sauce over; 1 beaten egg yolk and return mixture to pan. Stir until slightly thickened.

Add; seasoning, if required, 1/4 c. blanched slivered almonds and 1 Tbsp. dry sherry.

Fill patty shells or bread baskets, and serve at once. Servings can be doubled.
