1 c. butter, softened (no substitutes)
1 c. sugar
1/2 c. packed brown sugar
2 eggs
1 tsp. vanilla
3 c. flour
1 tsp. baking powder
1/2 tsp. salt
65 Andes mint candies
Directions:
Directions:
Cream butter and sugars. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking powder and salt; gradually add to creamed mixture. Cover and refrigerate 2 hours. With floured hands, shape a tablespoon of dough around each of the 42 candies, forming rectangular cookies.
Place 2 in. apart on greased baking sheets. Bake @ 375º for 10-12 minutes or until edges are golden brown. Cool on wire racks. In a microwave or sauce pan, melt the remaining candies; drizzle over cookies.
