1 1/2 c. bulgar wheat
1 bunch minced parsley
1 bunch green onions, minced
1 bunch chopped mint
2 tomatoes, skinned, seeded and chopped fine
2/3 c olive oil
1/3 c. lemon juice
salt to taste

Pour boiling water over bulgar wheat to cover and let stand 2 hours. Squeeze out excess water and mix with the rest of the ingredients.
Chill for several hours.
