2 # yellow squash
1 medium onion, diced
1 T. Fresh thyme leaves
1 stick butter, melted (divided)
1 c. cheddar cheese, divided
1/2 c. sour cream
1 T. Worcheshire sauce
1/2 t. Tabasco sauce
1/4 t. chili powder
1/4 t. cumin
Salt and pepper to taste
1 1/2 c. fresh breadcrumbs
2 T. Fresh parsley, chopped

Directions:
Directions:
Preheat oven to 350º
Steam squash, onions and thyme leaves until squash is
tender - do not overcook. Mix squash/onion/thyme mixture
with 1/2 c. cheese, 1/2 stick melted butter and next 6
ingredients. Pour into buttered casserole dish.
Heat remaining 1/2 c. butter in small saute pan. Lightly brown
fresh breadcrumbs adding fresh parsley when done. Top
squash mixture with breadcrumbs and sprinkle remaining 1/2
cheese and bake for 30 minutes until bubbly and brown on
top.
