1/2 c onion, minced
1 clove garlic, pressed
3 T olive oil
1 lb lean ground beef
1 egg, lightly beaten
3/4 c Italian bread crumbs
2 T fresh parsley, chopped
1/4 t salt
dash of freshly ground pepper

Directions:
Directions:
Combine 1/4 c of the minced onion and half of the pressed garlic clove with all remaining ingredients, except the oil. Roll mixture into 1 1/2 inch balls. Next, in a heavy lidded frying pan, lightly sautee remaining onion and garlic in olive oil. Add meatballs and cover. Cook on medium to medium low, repositioning them every few minutes to ensure even cooking, for about 12 - 15 minutes...or until golden brown.

Pour in your favorite marinara and allow to simmer for as long as you can stand it (at least 20 minutes).
