2 1/4 c flour
1/2 tsp salt
1 tsp vanilla
1 tsp baking soda
1/2 c butter
1 1/2 c brown sugar
1 egg
1 c buttermilk
2 c peeled and diced apples

1/2 c brown sugar
1/3 c flour
1 tsp cinnamon
2 tbsp melted butter

Heat oven to 350

Mix all the batter ingredients together, adding the apples last. Either grease and flour the muffin trays or line with muffin papers. Fill each 1/2 to 2/3 full.
Mix all topping ingredients together and sprinkle some on the tops of each muffin.
Bake for about 8 - 12 minutes or until a pick comes out clean.
This can be baked in loaf pans to give as gifts. Freezes well.
