1 head of Cauliflower
1 Bunch Celery
1 Bunch Carrots
1 yellow pepper
1 green pepper
1 red pepper

dressing: 1/3 cup vinegar
1/3 cup white sugar
1/3 cup veggie oil
1 red onion sliced into rings
1/2 tsp each of oregano, sage, onion
powder, garlic powder
1 tsp salt and pepper

2 days before make dressing. Pour all above dressing ingredients into a dressing shaker or bowl and refrigerate overnight.

1 day before serving: chop cauliflower into flowerettes (not too small), cut celery diagonal and carrots as well (not too thin) slice peppers into slice. Set aside

1tsp of salt in pot and bring to a boil (use a fairly large pot) you are going to boil each vegetable for one minute separately so the colours remain vibrant. this is what makes the salad look so pretty......

1st: Cauliflower in boiling pot and boil for ONE minute, remove
2nd: Celery - once boiling rapidly - one minute, remove
3rd. Green and yellow peppers - once boiling rapidly - one minute, remove
4th: Carrots and red peppers together in pot, once boiled for one minute, remove
Place all vegetables in a bowl to cool down. Once cold toss dressing (using fingers enhances flavours) not sure why - must be the Italian in me....haha Refigerate overnight to marinate.

Don't let the 2 day preparation scare you. This is very easy and well worth it. Serve in a clear glass salad bowl if you have it to show off the colours. This has great presentation and tastes great. Remember to keep the order of the veggies into the boiling water to keep the veggies from losing their colour. Enjoy!
