1 # penne pasta
4 c. whole milk
4 T. unsalted butter
6 T. unbleached all-purpose flour
1 t. paprika
Salt and freshly ground pepper to taste
12 oz. Gruyere cheese grated (4 c)

Bring a large pot of water to a boil. Add the penne and cook at
rolling boil until just tender. Drain and rinse under cold water.
Drain again and set aside in a large bowl.
Preheat oven to 350
Bring milk just to a boil in a heavy saucepan and set aside - or
microwave until it begins to boil - about 5 minutes
Meanwhile, melt butter in another heavy saucepan. Add flour
and whisk over low heat for 5 minutes. Do not brown.
Remove from heat.
Add the hot milk to the flour mixture and whisk well. Add 1/2 t.
paprika, season with salt and pepper, and return the pan to
the heat. Cook over med. heat, whisking constantly until
mixture thickens, 5 minutes. Add to the penne and toss well
to coat penne completely.
Butter 13x9x2" baking dish and fill evenly with penne and
Distribute the grated cheese evenly over the penne and
sprinkle with black pepper and additional paprika.
Place dish on baking sheet and bake until hot 20 o 25
Then Broil until top is slightly golden and bubbling - 3 to 4
minutes. Serve immediately.
