Enough fish for your party - Use 1/2 Lb per person rule (more if you want great fish sandwiches the next day), salt, pepper, lemon, Cavender"s Greek Seasoning, Extra Virgin Olive Oil

Cut fillets (1) one inch thick - Season to taste - Wipe pan with paper towel wet with olive oil - Heat pan 3/4 throttle - Place fish in pan - Stand over - When bottom of fish turns white 1/4 inch up, carefully turn over and whiten new "bottom" 1/4 inch - Rush to table and enjoy - Do not be squeamish, it'll all be white by the time you eat!

As in all seafood cooking the secret is DO NOT OVERCOOK. Above goes good with baked potato and broccolli or asparagus or tomato (for color). Next day sandwiches - Mayo &/or Ranch dressing
