1 baked 9" pie crust
2 (8oz.) packages fat-free cream cheese
1 (4 serving) package sugar-free instant vanilla pudding mix
2/3 c. nonfat dry milk powder
1 c. water
1/3 c. Cool Whip Free
1 (4 serving) package sugar-free vanilla cook-and serve pudding mix
1 (4 serving) package sugar-free raspberry gelatin
1 c. water
1 1/2 c. frozen unsweetened raspberries
1 tsp. almond extract
1 tbsp. chopped almonds

Directions:
In a medium bowl, stir cream cheese with a spoon until soft. In another bowl whisk together dry milk powder, 1 c. water, and dry instant pudding mix. Mix pudding mixture into cream cheese with a wire whisk until well blended. Gently blend in Cool Whip Free. Spoon mixture into cooled pie crust. Refrigerate.
In a medium saucepan, combine dry cook-and serve pudding mix, dry gelatin, and 1 c. water. Cook over medium heat, stirring often until mixture thickens and starts to boil. Remove from heat. Gently fold in raspberries, and almond extract. Cool for 5 minutes. Evenly spoon raspberry mixture over cream cheese mixture. Sprinkle almonds evenly over top. Refrigerate for at least 1 hour. Cut into 8 servings.

211 calories, 7 gr. fat, 11 gr. protein, 26 gr. carbohydrate, 669 mg. sodium, 76 mg. calcium, 1 gr. fiber
Diabetic - 1 starch, 1 fruit, 1/2 meat, 1/2 fat
