3 c. loosely packed fresh baby spinach
1/3 c. pineapple (canned or fresh)
1/4 to 1/2 c. sliced strawberries
1/4 c. sliced celery
1/2 medium apple, cubed
2 T. sliced almonds, toasted
1/4 c. reduced-fat raspberry vinaigrette

Directions:

Divide the spinach, celery, strawberries, pineapple and apples between two salad plates. Sprinkle with almonds. Drizzle with dressing.

This recipe called for mandarin oranges and seedless red or green grapes, halved, but said you could substitute strawberries and pineapple, which is how I made it. I also used a sweet and sour dressing on the side rather than the raspberry vinaigrette. I used mixed greens with the baby spinach.
