1/2 c butter
1 c brown sugar
1 c pineapple
2 T pecans
1 c flour
1 t baking powder
1/8 t salt
3 eggs, separated
1 c granulated sugar
5 T pineapple juice

Directions:
Directions:
Melt butter in bottom of baking pan. Spread brown sugar evenly in pan. Arrange pineapple slices and pecans over sugar. Sift flour, baking powder, and salt together. Beat egg yolks until light, then mix into dry ingredients. Beat egg whites until stiff and fold into mix. Pour all over pineapple in pan. Bake at 350º for 30 minutes.
