Armstrongs' Coconut Pie Recipe

3 egg yolks
1 egg
1 c. sugar
3 tbls. cornstarch
1 small can carnation milk
1 c. water
1 c. whole milk
3/4 c. coconut (fresh or frozen)

Directions:
Directions:
Cook all ingredients until thick, stirring constantly. Remove from heat and add:
1 tsp. vanilla
1/2 stick margarine

Pour into a baked deep dish pie shell. Beat the 3 egg whites with 1/8 tsp. cream of tartar. Add 1/4 c. sugar and continue beating until stiff. Pour over mixture in pie shell and sprinkle with coconut. Bake at 300º until lightly browned. Cool and enjoy.
