3 cups tri-color rotini pasta
1 1/2 tablespoon red wine vinegar
1 cup diced cucumbers
1 small clove garlic, crushed
1 cup grape tomatoes
1/4 teaspoon oregano
1 3.25-ounce can sliced olives
1/8 teaspoon parsley
1 cup crumbled feta cheese
1/4 teaspoon salt
2 tablespoons diced red onion
1/4 teaspoon sugar
Dressing:
small squirt of Dijon mustard
1/3 cup olive oil

Directions:
Directions:
Cook pasta, drain and rinse with cold water. Let drain well again then add pasta to a large bowl. Add the rest of the salad ingredients to the bowl of pasta. Combine dressing ingredients, mix well and set aside. Add dressing to the pasta bowl and mix thoroughly. Chill for 1 hour before serving.
