Ingredients: 22 tomatoes 5 large onions 2 large bell peppers 15 to 20 jalapeño peppers with seeds 1 small can chopped green chilies 2 (12 oz.) cans tomato paste 1 c. white vinegar 1/4 c. canning salt 1/2 c. sugar garlic to taste chopped fresh cilantro to taste

Directions:Clean all vegetables. Put tomatoes with skins, onions and peppers through a food processor. Mix together with remaining ingredients and cook for 25-35 minutes in a large pot. Spoon into hot jars while hot – Hot water bath for 30 minutes. |

Notes: This is our normal salsa recipe. For the hot one we substituted 2 dozen habaneros for the jalapeños. You can substitute different kinds of peppers depending on how hot you want the salsa, or just add more of the kind you are using. Sometimes we add banana or chili peppers too. We also like to use Roma tomatoes but you will need more then 22 – we figure about 3 or 4 Romas to make 1 regular sized big boy. It makes a thicker salsa. Ben says to add 1 pint of salsa to 2 pounds of fresh ground meat of your choice to make great "salsa burgers".
