Vegetable oil for frying.
1 Can of Marinara sauce or make fresh... add Add 1 tsp. of red pepper if you like a little kick!
1 lb. Calamari, at least 4-5 inches long...Cleaned...remove ink sac.
1 Large onion..fine chop.
1 Egg, hard boiled and finely chopped.
2 Eggs...raw.
3/4 c. Bread crumbs.
1/4 c. Romano cheese.
1 T. Fresh parsley.
Salt & pepper to taste.

Saute onions til tender.

Chop tentacles and add tentacles to onions in low heat skillet and fry for 1 minute....reserve

To make stuffing combine bread crumbs, cheese, hard boiled egg, raw eggs, seasonings...If too much liquid add more bread crumbs.

Place 1 T. stuffing (approx) in each squid and use wood tooth pick to close. Don't fill to brim...because squid will shrink when fryed.

Put stuffed squid in heated & oiled skillet until squid shrinks...a minute or two.

Remove and drain.

Heat Marinara sauce, and add optional red peppers. Cook for 5 -10 minutes under low heat.

Add stuffed squid ( leave tooth picks intact) to marinara sauce and cook for another 5-10 minutes.

Serve with pasta or over real Italian Bread.
