1 Pkg. Navy beans or cannellini beans. See note below!
1 lb. Pasta
3 T. Olive oil
1 Large Onion.
2 Stalks celery.
2 Carrots.
2 Cloves Garlic.
3 Fresh chopped tomatoes or 8 oz. can of tomatoes.
Salt & Pepper to taste.

To prepare beans, soak overnight or boil for two minutes and let stand for 1 hour.

Heat skillet with olive oil under low heat.

Chop onion, celery and carrot.... saute until soft.

Add chopped tomatoes and garlic, fry till all tender...about 5 minutes.

Add beans,and chicken stock or water..enough to cover at least 2 inches. Cook for 1 hour or more, or until tender... under low heat. Stir occasionally.

In separate saucepan, cook pasta, drain and mix with bean sauce when ready.
