1 can Goya black beans rinsed and drained
1 can white shoe peg corn, drained
1 cup green pepper, finely chopped
1 cup red pepper, finely chopped
1 cup finely chopped celery
1 bunch green onions, chopped (I use only 2 or 3)
1 jalapeno pepper seeded, deveined and finely chopped
Mix above in large container
Boil 1 cup salad or vegetable oil
1/2 cup cider vinegar
1/2 cup sugar
1/2, tsp salt
1/4 tsp pepper
Let mixture cool and pour over ingredients.

Store in the refrigerator overnight in a covered container. When ready to serve, drain and serve with Frito scoops.

Good for a large crowd, men really enjoy this!
You can substitute the black beans for a can of pinto beans
(rinsed and drained) also add one can of black eyed peas
(rinsed and drained) if desired!
