1 Large Cauliflower - washed and chopped in to 3 or 4 inch chunks.
3 Cloves Garlic..chopped.
1 c. Bread Crumbs.
2 T. Fresh chopped Parsley.
1/2 c. Grated Parmesan cheese, plus extra for over pasta.
1 lb. Pasta ..e.g.Fusilli...Reserve 1 c. of pasta water.
1/2 c. olive oil....more if needed.
2 Large eggs.
Salt & Pepper to taste.
1/2 tsp. Red peppper flakes for over pasta.
1 Large Plastic Zip Lock bag

Prepare your pasta..al dente
Mix, in plastic bag...bread crumbs, garlic, parsley, salt & pepper, and cheese. Mix well and reserve.

Beat eggs in bowl.

Dip cauliflower into eggs,and mix well.

Place dipped cauliflower into plastic bag dry mix and shake well.

Heat oil in large skillet, and fry breaded cauliflower
until soften and carmalize.

About 1/3 through frying, pour about 1 laddle or less of the pasta water, stir & keep lightly covered...it's almost done. You need to figure out how long to fry....depends on size of skillet, etc.

When finished frying, then toss with cooked pasta, add parm cheese and red peppers. Serve.
