Apple layer:
4-5 apples, chopped
3 tbsp. sugar
1 c. nuts or raisins
2 1/2 tsp. cinnamon

Batter:
3 c. flour
2 1/2 c. sugar
4 eggs
1 c. oil
1/2 tsp. salt
3 tsp. baking powder
2 1/2 tsp. vinegar
3-4 tsp. frozen orange juice

Icing:
1/2 c. unsalted butter
4 tbsp. water
1/2 c. confectioner's sugar
1 tbsp. frozen orange juice
1/4 c. brown sugar
Lime or lemon juice
1/2 tsp. lime or lemon zest

Directions:
Directions:
Mix apples, sugar and nuts or raisins. Put in a bowl in the refrigerator for 1 hour. In a separate bowl, mix flour, sugar, eggs, oil, salt, baking powder, vinegar, and orange juice. In a greased and floured tube pan, layer apples and batter, ending with apple layer on top. Bake at 350º for 1 hour and 20 minutes. Mix icing ingredients together. Remove pan from oven and drizzle with icing.

The apple cake can be eaten after it cools, but it gets more moist and flavorful as it sits for a few days.
