2 cups Rice ( Carolina ) cooked.
1 Lb. Ricotta.
1 Lb.grated Mozzarella.
2 Eggs.
Salt and Pepper ( to taste).
Fresh Parsley.
Grated Cheese.

Directions:
Directions:
In a bowl mix ricotta and 2 eggs.
add rice,salt and pepper ( to taste), fresh parsley (to taste), and grated cheese.
Add Grated Mozzarella.
Mix everything together .
Roll into football shapes.
Then roll lightly into bread crumbs.
Let sit in Refrigerator overnight to bind together.
Fry till golden brown...
