1/2 cup butter, softened
2 T. snipped fresh parsley
1 T. finely shredded lemon peel
1 T. finely shredded orange peel
1 tsp bottled minced garlic (2 cloves)

1] In a small bowl stir together butter, parsley, lemon peel, orange peel, and garlic. If necessary, chill about 10 mins. or until easy to handle.
2] with your hands, shape the butter mixture into a 4-inch-long log. Wrap in plastic wrap; chill about 2 hrs.or until firm
3] To use, unwrap the butter and cut crosswise into 8 slices. place a slice of butter on top of each serving of grilled chicken , beef, veal fish, or veggies.

Greg and I made this for Grandma's weekend. We used steak, tenderizing it with Adolph meat tenderizer. We let it sit for a couple of hours and cooked it over a open pit,using Lawerys and pepper and a little Franks hotsauce. Cook your meat the way you like it done, put the Citrus-Garlic Butter on and enjoy!
