6 lb peeled peaches
6 c sugar
1 pt vinegar
1 pt water
1 T ground ginger
in a spice bag 2 T whole cloves, 4 sticks whole cinnamon
Additional vinegar & salt to drop peaches into as they are peeled

Directions:
Directions:
Drop peeled peaches into water containing 2 T of salt & 2 T vinegar per gal. (This prevents darkening). Mix vinegar, sugar, ginger & water, add spice bag & bring to a boil. Rinse & drain peaches & drop into boiling syrup. Cook about 1 minute until peaches are tender & can be pierced with a toothpick. Remove from heat & pack into jars leaving1/2 in of head space. Fill jars to within 1/2 inch of top of jars with boiling syrup. Remove air bubbles, put canning lids on jars & process 20 minutes in a boiling water bath.

NOTE: Use peaches that are not cling free. Be sure that canning jars have properly sealed. Store and open as needed.
