1 lb. ground beef
1 ˝ c. chopped onion
1 ˝ c. shredded carrots
1 ˝ c. diced celery
2 tsp. basil
2 tsp. parsley flakes
˝ c. butter or margarine
6 c. chicken broth
4 lbs. potatoes diced
˝ c. flour
2 lbs. velveeta cheese
1 ˝ tsp salt(unless using bouillon)
1 tsp. pepper
1 ˝ c. milk

Directions:
Directions:
In skillet, brown the ground beef and drain. In a large saucepan sauté the onion, carrots, potatoes, celery, basil, and parsley in ˝ of the butter. (Approx. 10 minutes)
Add the broth and beef and cover and simmer on reduced heat for 15 min. In the meat skillet melt the remaining butter and add the flour and cook until bubbly and then add to the soup. Bring to a boil cook for 2 min. Reduce heat to low and add milk, cheese, salt and pepper. Stir until cheese melts. Remove from heat and stir in sour cream.
