4 cups boiled potatoes, cubed, cold
1 tbsp. finely chopped red onion
1/2 cup chopped celery
1/2 tsp. salt
dash of pepper
1/4 cup French dressing - see below
1/2 cup mayonnaise
2 hard-cooked eggs, cut up

French dressing:
1/2 cup olive oil, vegetable oil, or a combination
1/8 cup vinegar
1/8 cup lemon juice
1/2 tsp. salt
1/4 tsp. dry mustard
1/4 tsp. paprika

Mix all together and shake well in a tightly covered container. Keep refrigerated.

Place potatoes, onion, celery in bowl. Sprinkle with salt and pepper. Mix lightly with French dressing. Chill an hour or two. Toss lightly with mayo. Carefully blend in eggs.
