4 medium potatoes
2 T. butter
1/2 c. sour cream
1/2 tsp. salt
1/2 tsp. pepper
1/2 c. shredded American cheese
2 tsp. thinly sliced green onion

Directions:
Bake potatoes in 425º oven for 40 to 60 minutes. Cut a lengthwise slice from the top of each potato. Discard skin from slice. Scoop out inside of each potato, leaving 1/2 of shell. Set shells aside. Mash potatoes; add butter. Beat in sour cream, salt and pepper. Stir in cheese and onion. Spoon mashed potatoe mixture into shell. Refrigerate on baking sheet for 2 to 24 hours or freeze. Bake (if refrigerated) in 425º oven for 35 minutes. If frozen, bake at 425º for one hour. Sprinkle with paprika, if desired.

Note: You may make potato mixture with milk and omit the cheese or put the cheese on top for a garnish.
