1 lb corkscrew pasta
1/4 c balsamic vinegar
1 tsp Dijon mustard
1/2 - 3/4 c olive oil
2 cloves garlic, minced
2 peeled and diced tomatoes or several grape tomatoes, halved
1 sm pkg pepperoni, julienned
1 green or red pepper, julienned
1/4 c chopped parsley
1 bunch green onions, thinly sliced
1/4 c grated parmesan cheese

Directions:
Directions:
Cook pasta according to package directions. Drain and rinse with cold water until pasta has cooled.

Whisk vinegar and mustard together in a bowl. Add olive oil and garlic and whisk again.

Add all other ingredients except pasta and cheese and mix together. Add pasta and toss lightly until pasta is well coated. Add cheese and toss again.

Marinate over night for best flavor.
