3-5 mushrooms, shiitake or white, coarsely chopped
1/4 c olive oil
1 clove garlic minced
1/4 c white onion, finely chopped
2 c vegetable stock
1 tbsp nutritional yeast or brewers yeast
1 tbsp soy sauce
3 to 5 tsp wondra flour to thicken

Directions:
Directions:
Saute onion, garlic and mushrooms in olive oil until soft, about 3 minutes.

Add vegetable stock, soy sauce and yeast. Stir.

Slowly add flour to thicken the sauce. Add as much as you need until you reach the desired texture.

I use bullion for the stock. I dissolve it in the water over a low flame first. Then it is already warm when you add it to the gravy.
