Tortilla chips
Lettuce - shredded or torn into small pieces
Kidney beans
Garbanzo beans
Tomatoes - diced (or use grape tomatoes)
Ground beef - browned and cooked with taco seasoning
Cheddar cheese - shredded
Salsa
Green chilies
Olives - chopped
Avocado pieces
Sour Cream
TACO SAUCE (mix the following items in equal parts):
Plain non-fat yogurt
Miracle whip or mayo (light is ok)
Catalina salad dressing (low cal or "free" is ok)

The beauty of this is that you can make the salad for 1 person or 40 or more!!

Place serving dishes of each item on buffet table.
Family or guests can "build" their own taco salad.
