2 eggs
1/2 cup sugar
1/4 tsp. salt
2 cup cooked rice
2 cup milk, scalded
1/2 tsp. vanilla
1/2 cup raisins (optional)
cinnamon (optional)

Directions:
Directions:
Heat oven to 350º.

Beat eggs, sugar, and salt slightly to mix. Stir in scalded milk and rice. Add vanilla. Pour into a 1 1/2 qt. baking dish and set in a pan of hot water (1" deep). I add in a sprinkle of cinnamon to the pudding as well as raisins. Also sprinkle a little cinnamon on top before baking. Bake at 350º for 50-60 minutes.
