Double recipe Tomato Sauce for Lasagna (see recipe in Sauces)
1 pound lasagna noodles
1/2 pound ground beef
1/2 pound Italian sausage or ground pork
(or 1 pound ground beef)
2 tablespoon olive oil
2 tablespoons butter
1 medium size onion, finely chopped
2 tablespoons fine minced fresh parsley
1/4 teaspoon marjoram
1/2 cup dry red wine
1 pound ricotta cheese
1/2 pound mozzarella cheese, cut into small dice or shredded
1/4 pound Bel Paese cheese, shredded (can substitute muenster)
1/4 pound Provolone, shredded
1/4 pound grated Romano (can substitute parmesan)
1 egg, beaten

Heat the olive oil and butter in a heavy saucepan. Add the onion. Saute until onion until yellow. Add the meat and continue to saute, stirring frequently, until the meat is no longer pink. Add the parsley, marjoram, and red wine. Simmer until wine has almost evaporated. Add tomato sauce. Simmer 15 minutes more. Season with salt and pepper to taste.

In a mixing bowl combine the ricotta cheese, mozzarella cheese, Bel Paese cheese, 1/4 cup grated Romano cheese and egg. Mix Well.

Boil the lasagna, following package directions.

Oven to 350º
Butter a large shallow baking pan or casserole. Place a layer of sauce on the bottom. Place noodles on bottom of pan. Spread noodles with sauce and cheese mixture. Continue making layers in this fashion until all the ingredients are used. Sprinkle the top layer with Romano and mozzarella cheese. Cover with foil. Bake 30-45 minutes or until warmed through; remove foil and bake an additional 10 minutes until cheese on top browns slightly.

Dave first made this lasagna years ago. I requested it for my 8th grade graduation party!!! This is the BEST lasagna EVER!!!!!!! It takes a while to make, but it is so delicious! I add mushrooms to the sauce.
