1 lb. ground beef
1/2 c. chopped onion
1 garlic (minced)
16 oz. can tomatoes (cut up)
8 oz. can tomato sauce
6 oz. can tomato paste
1 tsp. salt
8 oz. lasagna noodles
1 tbsp. cooking oil
2 eggs
2 1/2 c. cottage cheese
3/4 c. Parmesan cheese
2 tbsp. parsley flakes
1 lb. mozzarella cheese

Cook meat, onion and garlic - let meat brown. Drain off fat. Stir in the undrained tomatoes, sauce, paste and salt. Cover, simmer 15 minutes. Meanwhile, cook noodles until tender in boiling salted water with oil added to water. Drain and rinse. Beat eggs, add cottage cheese, 1/2 c. Parmesan, parsley, salt, and pepper. Layer half the noodles in 13x9x2 baking dish; spread with 1/2 the cottage cheese filling. Add half mozzarella cheese and half the meat sauce. Repeat layers. Sprinkle top with remaining Parmesan cheese. Bake 30 - 35 minutes. Let stand about 10 minutes.
