1 cup sugar
1 package Acini di Pepe pasta
1 tablespoon flour
2 cups pineapple chunks, drained
2 1/2 teaspoon salt, divided
1 cup crushed pineapple
2 eggs - beaten
2 cups mandarin orange
2 1/2 cups pineapple juice
segments, drained
1 tablespoon lemon juice
1 16-ounce container cool whip
3 quarts water
Red maraschino cherries

Combine sugar, flour and 1/2 teaspoon salt in a sauce pan. Stir in eggs and pineapple juice. Cook until thick. Add lemon juice and cool. Bring 3 quarts of water and 2 teaspoons of salt to a boil. Add Acini Pepe and cook for 8 minutes. Drain, rinse and cool. Combine egg/juice mixture and pasta. Let stand in an airtight container overnight. Add fruit and cool whip and mix before serving.
