1 medium head of cauliflower
2 tbsp. butter or margarine
2 tbsp. flour
1 tsp. dry mustard
1/4 tsp. salt
1/4 tsp. black pepper
1 c. milk
1 c. shredded cheese
5 drops of red pepper sauce
Paprika, if desired

Wash cauliflower and separate into florets. Heat 1-inch of salted water to boil and add cauliflower. Cover and heat to boiling. Cook until tender, 10 to 15 minutes. Drain and set aside in serving bowl.

Melt butter in saucepan over low heat. Blend flour and seasonings. Cook over low heat, stirring until mixture smooth and bubbly. Remove from heat. Stir in milk. Heat to boiling, stirring constantly. Boil and stir 1 minute. Stir in cheese and red pepper sauce. Cook and stir over low heat until cheese is melted. Pour sauce over hot cauliflower. Sprinkle with paprika, if desired.
