Pancake;
2 eggs
1/2 c milk
1/2 c flour
1/4 tsp salt
A few grains of nutmeg, ground
1 tbsp vegetable oil
Sauteed Apples and Raisins;
1/4 c butter
4 large apples, peeled, quartered, cored and cut crosswise in 1/4 inch thick slices
1/2 c brown sugar, packed
1/2 c water
1/4 c golden raisins
1 tsp lemon juice

Directions:
Directions:
Pancake; 1. Heat oven to 450. Have ready a 9 to 10 inch ovenproof skillet. 2. In food processor; Process eggs, milk, flour, salt and nutmeg until smooth. 3. Heat oil in skillet, in oven for 5 minutes. When very hot, pour in batter. 4. Bake uncovered 18 to 20 minutes without opening oven door, until pancake is puffed and crisp around edges and golden brown in middle.
Sauteed Apples and Raisins:
1. Melt butter in a large skillet over medium heat. Add apples and cook 4 minutes. Shake skillet to turn apple slices or stir gently. Cook 2 to 3 minutes longer until almost tender. 2. Add sugar, water and raisins. Bring just to a boil. Remove from heat. Taste and add lemon juice. Serve warm
