1 dozen large eggs
1 lb. frozen hashbrowns
1/2 red pepper, diced
1/2 green pepper, diced
1/2 small onion, dices
2 c. shredded Cheddar cheese
1 lb diced ham or crisp-fried bacon
1 tsp. salt
1/2 tsp. black pepper

Directions:

Mix all ingredients in a large mixing bowl at medium speed for 2 minutes. Pour into a buttered 9"x13" pan. Bake at 350º for 35 to 50 minutes or until set.
