1 8 OR 9 inch graham cracker crumb pie crust
3 egg yolks
1 14 oz. can Eagle brand sweetened condensed milk
1/2 cup lemon juice
Yellow food coloring (optional)
Cool whip

Directions:
Directions:
Preheat oven to 350 degrees. In medium bowl beat egg yolks, stir in sweetened condensed milk, lemon juice and a couple of drops of yellow food coloring. Pour in prepared pie crust and bake 8 - 10 minutes. When cooled spread whipped topping.

This pie was always a hit at Mexico Beach. We would substitute the lemon juice with key lime juice and make our version of a key lime pie.
