2 2/3 cups sugar
2/3 cup shortening
2/3 cup buttermilk
2 cups mashed bananas
1 teaspoon vanilla extract
3 1/2 cups all purpose flour
1/2 teaspoon ginger
2 teaspoons baking soda
1 teaspoon salt
2/3 cups chopped nuts
1 teaspoon baking powder
4 eggs
1/2 teaspoon cinnamon

In large bowl cream sugar and shortening with electric mixer. Add eggs and mix well. Add buttermilk and vanilla and mix well. Place dry ingredients in a separate bowl and mix well. Gently stir in mashed bananas and nuts. Place 1 cup of batter in 7 well greased 1 pint wide mouth canning jars. Place on baking sheet and bake for 45 minutes at 325 degrees or until toothpick inserted comes out clean. Immediately place lids on jars to seal.
