8 ounces spaghetti
1/2 cup green peppers (optional)
5 tablespoons butter or margarine
1 cup fresh or canned mushrooms,
6 tablespoons flour
including juice
3 cups chicken or turkey broth
3 cups cooked turkey, chopped
1 cup light cream
(I actually usually use chicken)
Pepper to taste
1/2 cup shredded Cheddar cheese
1 teaspoon salt
1/2 cup Parmesan cheese

Directions:

Break spaghetti into pieces and boil in salted water until just tender (don’t overcook). Melt butter, blend in flour. Stir broth into flour mixture. Add cream. Cook until mixture thickens and bubbles. Add salt and pepper, drained spaghetti, green peppers, mushrooms and cooked turkey. Turn into individual baking dishes or into a 2-3 quart casserole dish. Sprinkle with cheeses. Bake at 350º for about 30 minutes or until bubbly and lightly browned.
