1 pkg. flour or corn tortillas
2 lb. lean ground beef
1 pkg. enchilada seasoning
1 can enchilada sauce (red)
1 onion
1 pkg. shredded mild cheddar cheese

Directions:
Directions:
Brown the meat with the chopped onion. After the meat has browned, add the enchilada seasoning and mix well. Next, pour the enchilada sauce in a flat bowl so that you can dip your tortillas in the sauce. To assemble: Dip the tortilla in the sauce, add a little beef and sprinkle in some cheese, and then roll up the tortilla. After assembling the enchiladas, pour the remaining sauce on top. Then sprinkle the top with the leftover cheese. Cover and bake at 350º for about 30 minutes.
